- 4 Cups old-fashioned rolled oats
- 1 Cup coconut
- 1 Cup wheat germ
- 1 Cup peanuts
- 1/2 Cup flaxseed meal (or other preferred ingredient -ie. raisins, etc.)
- 1 Cup honey
- 1/2 Cup canola oil
- 1 T. cinnamon
Preheat oven to 325 degrees. Mix the first five ingredients in a large bowl. Heat the oil, honey, and cinnamon in a small saucepan, and bring to a boil. As soon as it boils, take off heat and pour into dry mixture. Mix the ingredients thoroughly and spread onto a 12x17 sheet pan (or two smaller pans). Bake for 9 to 10 minutes, then turn the pan around, and bake for an additional 9 to 10 minutes (this is to ensure even baking). TOTAL baking time is 18 to 20 minutes. Watch closely to make sure the granola does not become too dark. Let the granola cool for about 30 minutes, then break into chunks and store in an airtight container. I've adapted this recipe from the More-with-Less Cookbook, by Doris Janzen Longacre.
