- 10 oz. fresh green beans, trimmed
- 4 slices bacon, diced
- 1/2 to 3/4 tsp. (to your taste) crushed red pepper flakes
- pinch of salt
- 1/4 water
- 1/3 c. crumbled bleu cheese
On the stove top, preheat a skillet to medium heat. Add the diced bacon and cook until crisp. Remove the bacon and transfer to a plate lined with paper towels so any excess grease is absorbed. Reserve 1 tbsp. of the bacon fat in your skillet. Add the green beans and water to the skillet, and cover with a lid. Allow the beans to steam under cover for 3 to 5 minutes, or until the beans are just tender. Remove the skillet lid, and season the beans with a good pinch of salt and the red pepper. Saute the beans for another 2 - 3 minutes, then add the bacon. Saute for another 1 - 2 minutes. The water in the pan should be evaporated and the beans should be tender. Transfer to a serving dish. Sprinkle with the crumbled bleu cheese. Serves 3.
