German Pancake

  • 6 eggs
  • 1 c. milk
  • 1 c. all-purpose flour
  • 1/2 tsp. salt
  • 2 tbsp. melted butter
  • 1 c. raspberries (optional)
Preheat oven to 400 degrees. Put the eggs, milk, flour, and salt into a blender and process until smooth. Pour the melted butter into an ungreased 9"x13" baking dish. Tilt the dish so the butter covers the entire bottom of the dish. Then pour the mixture from the blender into the dish. Place the berries (if using them) into the batter by hand so they are evenly dispersed in the dish. Bake at 400 degrees for about 20 minutes or until it "puffs" and is golden brown. Serve immediately with powdered sugar or syrup. It is normal for the pancake to deflate a bit after cooling. Serves 6 to 8. Recipe from tasteofhome.com.
