Red Pepper Parmesan Fish Fillets

  • 1-1/2 lbs. of fish fillets (any mild variety - cod, haddock, catfish, etc.)
  • 1 c. grated Parmesan cheese
  • 1/4 c. all-purpose flour
  • 1 tsp. crushed red pepper flakes
  • 3/4 tsp. salt
  • 2 egg whites
  • 2 tbsp. low-fat milk
Preheat oven to 400 degrees. Line a baking sheet with foil (for easy clean-up) and spray lightly with non-stick cooking spray.

In a shallow dish, combine the Parmesan, flour, red pepper flakes, and salt. In a shallow bowl, combine the egg whites and milk. Working with one fillet at a time, dip in the egg white mixture so it is thoroughly moistened, then place in the Parmesan mixture and coat so the entire fillet is covered in the dry mixture. Place the fillets the baking sheet, and spray them lightly with cooking spray. Bake in a 400 degree oven for about 20 minutes or until the fish flakes easily with a fork.
